Easiest Taco Soup, a Family Favorite!
We are very ready for fall around here! One of our favorite meals as it gets colder is also one of the easiest meals I have saved. It is a recipe perfect for large gatherings OR for just our family- toddler included. It is a great way to get some fiber in your kiddos. The best part is you can dress it up or dress it down depending on your liking! All you need is a big Dutch oven or skillet, a mixing spoon, and the ingredients. Here is the recipe:
1-2 lb ground beef
2 cans black beans
1 can dark red kidney beans
1 can light red kidney beans
1 can corn
2 cans petite diced tomatoes
1 can rotel
1 packet of taco seasoning
1 packet of ranch seasoning
Step 1: Brown the ground beef and drain excess fat when cooked. (We like more meat in ours so we tend to go with closer to 2 lbs, but I think originally it calls for 1 lb. Whatever suits your fancy!)
Step 2: Dump every other ingredient (canned and packet) into cooked meat.
Step 3: Stir, let boil. Once boiled, eat!!
Step 4: We serve ours with Fritos, sour cream, and shredded cheese. It’s a perfect meal for a Sunday dinner while watching some football when it’s cool outside! Enjoy the easiest meal of your life, friends!!
